I can absolutely build a X11+Quartz vm and put it in the extras folder of the DMG.

David, can you or someone else who uses the X11 functionality check whether this works like the old VM? I'm not 100% sure how to test it.

I don't think it is a good idea to make it the default VM. Most people won't have X11 on their mac, which means they will have to download and install a ~90MB package from a non-Apple third party before the VM will work at all, even if they never use the screen sharing.
